HOW TO MAKE PROTEIN PACKED STRAWBERRY YOGURT BITES

PREPARE THE STRAWBERRIES

Start by washing the strawberries and roughly chopping them into small pieces. This will ensure that each bite of chocolate-covered frozen yogurt is exploding with fruity flavor.

MIX THE YOGURT AND PROTEIN

Add your coconut yogurt along with vegan vanilla protein, almond butter, and cinnamon to a bowl. Stir until all the ingredients are combined. This mixture will serve as the base for your frozen yogurt bites.

ADD THE STRAWBERRIES

Add the chopped strawberries to the yogurt mixture and gently toss them to coat evenly.

FORM THE BITES

Line a baking sheet with parchment paper. Divide your mixture into 9 dollops on a lined baking sheet.

FREEZE THE BITES

Place your yogurt bites in the freezer until hardened, at least 1-2 hours.

MELT THE CHOCOLATE CHIPS

Add your chocolate chips to a small bowl with your coconut oil and melt in the microwave in 30-second increments, stirring in between so the chocolate does not burn. Heat until the chocolate chips have melted, and you have a smooth and glossy chocolate sauce.

COAT THE VEGAN STRAWBERRY YOGURT BITES

Dunk each frozen yogurt bite into the melted chocolate, ensuring that both sides are covered well.

SERVE AND ENJOY!

The chocolate will automatically harden and make a magic shell around the yogurt bites, creating a delightful crunch. But if they do not, make sure to place them back into the freezer. Serve when ready!

RECIPE TIPS FOR STRAWBERRY YOGURT BITES

  • Make sure your chocolate is vegan! A lot of chocolates are accidentally vegan! Usually, most semisweet chocolates are vegan; make sure to read the ingredients and check! Most high-percentage dark chocolates are also vegan!
  • Add different spices: You can also sprinkle flaky sea salt right after dipping bites in chocolate. You can add pumpkin pie spice or ground nutmeg.
  • Don’t have a microwave? You can also melt the chocolate over a double boiler.
  • Make this lower in calories – Instead of fully dunking your yogurt bites, you can instead drizzle chocolate over the top to keep this dessert a little lighter.
  • Storage Tip: Transfer the frozen yogurt bites to an airtight container or freezer bag and store these frozen yogurt bites for up to 2 months in the freezer.
  • Do not dip in chocolate until the strawberry yogurt bites are completely frozen.
  • Add shredded coconut: Add shredded coconut on the top for a tropical twist.

ALLERGIES & SUBSTITUTIONS:

  • Swap coconut yogurt: Use a different kind of plant-based yogurt.
  • Can’t find plant-based yogurt? Try using mashed banana or pumpkin puree instead! Blended silken tofu may also work, although I have not tried it yet. Let me know in the comments if you do!
  • Can I use a different flavor of protein powder? While the recipe calls for vegan vanilla protein powder, you can add your favorite flavor to add a unique twist to the bites.
  • Swap the strawberries for another fruit, such as blueberries, raspberries, diced mangoes, or peaches. The possibilities are endless!
  • Swap the almond butter for peanut or cashew butter or omit it altogether.
  • Add-ins to boost nutritional value – Add nuts and hemp seeds.
