Ingredients
- 12 oz tuna, drained
- 1 green bell pepper, finely diced
- 1/2 yellow onion, finely diced
- 1/2 cup light mayonnaise
- 1-2 chipotle peppers in adobo sauce, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp chili powder
- 1/2 tsp garlic powder
- 1 tsp salt, or to taste
- 1 tsp black pepper, or to taste
For Sandwich
- 4 slices cheddar cheese, or other preferred cheese
- 4 slices sandwich bread, lightly toasted
- salsa, optional for topping or dipping
- jalapeño, optional for topping
Instructions
- In a medium bowl, combine all ingredients except for the cheese, bread, and toppings and mix well.
- Spread the tuna mixture onto the toasted bread slices and place on a baking sheet. Top each with a slice of cheese.
- Broil in the oven for 1-2 minutes or until the cheese is melted. Finish with toppings such as fresh jalapenos and salsa and serve immediately.
