Southwest Tuna Melt

If you’re looking for incredibly easy high protein tuna recipes, then you will love this Southwest Tuna Melt. It couldn’t be easier to whip up if you want a quick macro friendly snack, or make the full batch as an easy weeknight dinner.

There are so many health benefits to eating tuna. Not only is it a super easy and affordable protein option, it is also a great source of vitamin B12, omega 3 fatty acids, iron and vitamin D.

Southwest Tuna Melt Recipe Tips:

+ If you’re going to use this as a meal prep recipe, simply store the tuna mixture in an airtight bowl and assemble the bread and cheese part when you’re ready to eat. This works well in a toaster oven at the office as well!

+ This tuna mixture is also delicious served with crackers or even veggies like carrots and celery if you want an easy macro friendly snack!

+ If you can’t find the chipotle peppers in adobo at your grocery store, you can use any spicy pepper you want. You could even throw in a few red pepper flakes to add a little heat if that’s what you have on hand.

For Sandwich

  • 4 slices cheddar cheese, or other preferred cheese
  • 4 slices sandwich bread, lightly toasted
  • salsa, optional for topping or dipping
  • jalapeño, optional for topping

Instructions 

  • In a medium bowl, combine all ingredients except for the cheese, bread, and toppings and mix well.
  • Spread the tuna mixture onto the toasted bread slices and place on a baking sheet. Top each with a slice of cheese.
  • Broil in the oven for 1-2 minutes or until the cheese is melted. Finish with toppings such as fresh jalapenos and salsa and serve immediately.
