Slow Cooker Apple Cinnamon Oatmeal

Ingredients needed

  • Steel cut oats: Rolled oats do not work for this type of recipe because they do not stand up well to the long cooking process.
  • Apples: Any baking apple such as Granny Smith, Gala or golden delicious are good choices.
  • Light brown sugar: This oatmeal is lightly sweetened. It’s easy to add more sugar, maple syrup or honey to each individual bowl when serving if desired.
  • Milk: Dairy or non-dairy milk.
  • Apple cider: Adds even more apple flavor but can be replaced with apple juice or water.
  • Vanilla extract: You can swap vanilla extract with vanilla bean paste.
  • Ground cinnamon: Always use the best quality ground cinnamon when possible. It really makes a difference in the taste.

Instructions

To make slow cooker apple cinnamon oatmeal from scratch, start by preparing the apples. Core, peel and chop the apples into half inch pieces then place them into the insert of your slow cooker. Add the remaining ingredients and stir to combine.

Cook on the WARM setting for 8-10 hours. Once the oatmeal has finished cooking, the apples will have floated to the top. Stir them back into the oatmeal and serve.

If the oatmeal is too thick, use a little milk to help thin it down to the desired consistency. Serve as-is or topped with chopped nuts for even more flavor. A drizzle of maple syrup is also delicious with this oatmeal!

Leftovers can be stored in the fridge for up to 5 days. Any longer than that and it needs to be put in the freezer where it can be kept up to 3 months. When ready to eat, allow the oatmeal to thaw in the fridge and then reheat it on the stovetop or in the microwave.

INGREDIENTS

  • 2 Granny Smith apples (peeled, cored and chopped)
  • 2 cups steel cut oats
  • 2 cups apple cider
  • 2 cups milk
  • 3 cups water
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla extract
  • ¼ cup light brown sugar

OPTIONAL TOPPINGS

  • chopped walnuts
  • a drizzle of maple syrup
  • a splash of milk
  • an extra dash on cinnamon

INSTRUCTIONS

  • Add all of the ingredients to a slow cooker. Turn the slow cooker to the WARM setting and allow to cook for 8-10 hours.
  • Remove the cover and stir.

Notes

  • To Store: Keep the oatmeal in the fridge, covered, for up to 5 days.
  • To Freeze: Once it has cooled completely, spoon it into a freezer-safe container and keep frozen up to 3 months.
  • To Reheat: the oatmeal, warm it up on the stovetop or in the microwave.
