Its the weekend and its time to cook some Pasta tonight! I love this time of the year when its starting to get a bit warm outside. Its the best time to make use of some fresh seasonal produce and use it in your meals.
This Fajita Shrimp Pasta uses fresh and organic bell peppers, garlic and red onions. It all adds to the burst of Mexican flavors which you get in every spoonful of this hearty and comforting Shrimp Pasta recipe.

- Shrimps – Peeled and De-veined
- Pasta – I like to use Angel Hair Pasta because it holds the maximum flavors
- Bell Peppers, Red Onions & Garlic – to make the fajita
- Fajita Seasoning
- Lime Juice & Cilantro – for garnish

How to make Shrimp Fajita Pasta
Cook Pasta until al dente. Drain set aside. Cook Shrimp until crispy and set aside.

Heat Olive Oil in a skillet. As the oil shimmers add the diced bell peppers, onion and garlic. Saute for 2 min

Add the drained Pasta & Shrimps. Add the Fajita seasoning. Toss to combine.

Garnish with lime juice and freshly chopped cilantro. Enjoy!

Remember to not overcook the Shrimp. Shrimp tends to get overcooked very quickly. So cook them just until pink on both sides. Cook them in batches so that they cook perfectly.
Hint: Use Angel Hair or Linguine Pasta as these holds the flavors the best!

Storage
Store leftover Shrimp Fajita Pasta in an airtight container in the refrigerator. You can refrigerate this pasta for up to two days.
Reheat in the microwave before serving.
Leftover Fajita Shrimp Pasta can be frozen. Allow it to cool down completely and transfer to a freezer friendly ziplock bag. Freeze for up to a week. Thaw overnight in the refrigerator and reheat in the microwave or skillet before serving.

- 1 pound Angel Hair Pasta
- 2 tablespoon Extra Virgin Olive Oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- ½ red onion thinly sliced
- 4 tablespoon Fajita Seasoning
- 1 tablespoon Lime Juice
- Freshly chopped Cilantro, for garnish
INSTRUCTIONS
- In a large stock pot, heat up just enough water to cook the Pasta. Cook Pasta as per package directions until al dente. Drain and set aside.
- Heat 1 tablespoon Olive Oil in the same pot. Add the Shrimps and cook for 2 min (both sides). Remove when they turn pink and curl up.
- Add remaining olive oil to the pot. Add the diced bell peppers, onion and garlic. Saute until they soften for 2-3 min.
- Add the cooked pasta and shrimps. Add the fajita seasoning. Toss to combine.
- Garnish with lime juice & freshly chopped cilantro. Enjoy!
