Why You’ll Love This Strawberry Pie Recipe Without Jello

This recipe for strawberry pie is all about celebrating the taste of fresh strawberries without needing to overpower them with artificial flavors. So, for the best flavor, it is essential to use only quality fruit, whether you’ve picked it yourself or bought it at a local market or farm stand.

The no-roll pie dough for the crust is both simple to make and incredibly flaky, allowing the pie to come together in a matter of minutes. Your reward is an extraordinary pie that captures the essence of summer in every bite.

The History of Fresh Strawberry Pie

Travelers returning from the Americas introduced the first strawberries to Europe during the 1600s, but it wasn’t until the late 18th century that the fruit was grown commercially. Most strawberries were eaten fresh or made into jams and fritters in the early days.

By the 1840s, the earliest published recipes for strawberry pies started to appear in Europe and several years later in the United States.

Ingredients You Will Need

For the pie crust, you’ll need:

  • Water
  • Granulated sugar
  • Salt
  • Cornstarch
  • Red food coloring (optional)

How to Make an Old Fashioned Strawberry Pie

To prepare the crust:

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the flour, unsalted butter, powdered sugar, and vanilla extract. If you have the time, try freezing the butter and then grating it into the bowl using a cheese grater. The tiny pieces of butter will make the dough extra flaky.
  3. Stir the ingredients together with a wooden spoon. If the ingredients refuse to come together into a crumbly dough, add a tablespoon of ice-cold water, but only as a last resort. Too much liquid will make the crust tough.
  4. Press the dough onto the bottom and sides of a 9-inch pie pan.
  5. Prick the dough all over with the tines of a fork and blind bake for 10 to 15 minutes until the crust is golden brown. There is no need for pie weights.
  6. Cool the crust completely in the pie pan on a wire rack. As the crust is cooling, start to prepare the glaze for the pie using the directions below.

To prepare glaze for strawberry pie:

  1. Combine the water, granulated sugar, salt, cornstarch, and food coloring, if using, in a small saucepan.
  2. Place the saucepan over medium heat and stir constantly for five minutes until the mixture thickens. Remove the saucepan from the heat and let the strawberry pie glaze cool to room temperature.

To assemble the strawberry pie:

  1. Rinse and dry the fresh berries.
  2. Use a sharp paring knife to hull the strawberries.
  3. Arrange the hulled strawberries neatly on the cooled crust.
  4. Pour the cooled glaze over the top of the strawberries and place the pie in the fridge to chill until the glaze hardens.
  5. Slice and top each piece with a dollop of whipped cream before serving.

What to Serve With This Fresh Strawberry Pie Recipe

  • Ice cream. The height of strawberry season is hot, and there is nothing better to help you cool off than a scoop of vanilla ice cream. Standard vanilla or French vanilla pairs well with this pie.
  • Add a topping to the whipped cream. Crumble a sugar cookie or shortbread over the pie to add a bit more crunch.
