The Fall is here and making hearty meals is on the top of my radar right now, and this deliciously creamy chicken cordon bleu casserole is the perfect recipe to feed your family that will be done in 30 minutes.

Loaded with shredded chicken, juicy pieces of cubed ham, layered with a creamy sauce and topped with endless slices of Swiss cheese, you are going to love each and every mouthwatering bite. 

What is chicken cordon bleu?

Traditionally chicken cordon bleu is a piece of meat that is wrapped around cheese, breaded and is fried.  Here I make it into a casserole, top it with ground croutons to give it that fried, crunchy effect when baked.

Ingredients

  • 3-cups rotisserie chicken, shredded
  • 1-12oz package baked cubed ham
  • 8 slices swiss cheese
  • 1/2 cup seasoned croutons, ground into crumbs
  • 2 tbsp avocado oil (or olive oil)
  • chopped parsley for garnish

For the sauce:

  • 2-10.5oz cans of cream of chicken soup with herbs
  • 1 cup sour cream
  • 1-0.7oz package Italian dressing mix

How to make chicken cordon bleu casserole

This recipe is very easy to make and can be made in either a casserole dish or cast iron skillet.

Preheat the oven to 375 degrees and spread the avocado oil in the bottom of the skillet, (if using a casserole dish spray lightly with nonstick cooking spray.

In a medium bowl mix cream of chicken soup(do not dilute with water), sour cream, and Italian dressing mix and set aside. 

Spread chicken evenly over the bottom of skillet and top evenly with ham. 

Spread the sauce evenly over the top of the ham and layer with slices of swiss cheese.  Sprinkle with crouton crumbs and bake for 30 minutes.  Garnish with fresh chopped parsley and serve.

HOW TO FREEZE CHICKEN CORDON BLEU CASSEROLE

To freeze, place in an airtight plastic or glass container.  Make sure the lid is sealed tightly and place in the freezer for up to two months.

Yes, this is a low carb casserole recipe with only 6 grams of carbs, and if you want to make it without the crouton crumbs to make it complete keto you can.
