What is chicken cordon bleu?

Traditionally chicken cordon bleu is a piece of meat that is wrapped around cheese, breaded and is fried.  Here I make it into a casserole, top it with ground croutons to give it that fried, crunchy effect when baked.

Ingredients

  • 3-cups rotisserie chicken, shredded
  • 1-12oz package baked cubed ham
  • 8 slices swiss cheese
  • 1/2 cup seasoned croutons, ground into crumbs
  • 2 tbsp avocado oil (or olive oil)
  • chopped parsley for garnish

For the sauce:

  • 2-10.5oz cans of cream of chicken soup with herbs
  • 1 cup sour cream
  • 1-0.7oz package Italian dressing mix

How to make chicken cordon bleu casserole

This recipe is very easy to make and can be made in either a casserole dish or cast iron skillet.

Preheat the oven to 375 degrees and spread the avocado oil in the bottom of the skillet, (if using a casserole dish spray lightly with nonstick cooking spray.

In a medium bowl mix cream of chicken soup(do not dilute with water), sour cream, and Italian dressing mix and set aside.

Spread chicken evenly over the bottom of skillet and top evenly with ham.

Spread the sauce evenly over the top of the ham and layer with slices of swiss cheese.  Sprinkle with crouton crumbs and bake for 30 minutes.  Garnish with fresh chopped parsley and serve.

HOW TO FREEZE CHICKEN CORDON BLEU CASSEROLE

To freeze, place in an airtight plastic or glass container.  Make sure the lid is sealed tightly and place in the freezer for up to two months.

IS CHICKEN CORDON BLEU CASSEROLE LOW CARB?

Yes, this is a low carb casserole recipe with only 6 grams of carbs, and if you want to make it without the crouton crumbs to make it complete keto you can.

Simply bake it with the swiss cheese on top and turn the broiler on high for the last minute to get the cheese more golden and bubbly, but don’t walk away, keep an eye on it so it doesn’t burn.

WHAT IS CORDON BLEU SAUCE MADE OF?

Chicken cordon bleu sauce can be made with a roux of butter, flour, whole milk and different seasonings.

In this recipe I keep it simple.

All you need is cream of chicken soup with herbs, sour cream, and Italian seasoning.
