- In a large bowl, whisk together maple syrup or honey, soy sauce or coconut aminos, toasted sesame oil and ginger. If salmon filets are not pre-skinned, remove salmon skin. Slice salmon into bite size cubes and place into the bowl with your marinade. Toss to coat salmon. Cover and refrigerate for about 30 minutes. (Do not marinate the salmon for too long as a longer duration can cause the fish to toughen.)
- Preheat air fryer to 400 degrees. Spray bottom of air fryer basket with olive oil (or preferred cooking spray) and add salmon cubes, discarding any remaining marinade. - Remove the skin from the salmon and cut into roughly 1 inch pieces.
- You can either have the butcher remove the skin, or simply pour boiling water over the skin and then peel it off.
- Melt the butter in a skillet over medium heat.
- Once hot, add the salmon pieces and saute on each side until golden and crispy, about 2 minutes each side.
- Meanwhile, whisk together all remaining sauce ingredients in a small dish.

INSTRUCTIONS
- Remove the salmon skin. You can also ask a fishmonger to do this for you. Dice the fillet into 1-inch (2.54cm) cubes and add them to a large bowl.
- Season the salmon chunks with salt, garlic power, paprika, black pepper, honey, and olive oil. Gently toss them well to coat the salmon evenly. I wear a cooking glove to do this.
To air fry:
- Spray the air fryer basket with olive oil, add the cubed salmon with some space between them. You might need to cook them in 2 batches. Air fryer at 350°F (177°C) for 8 minutes.
- In the meantime, prepare the bang bang sauce. Combine the ingredients in a bowl.
To bake:
- Line a large sheet pan with parchment paper and add the salmon chunks with a little space between them. Bake at 400°F, top rack, for 10-12 minutes.
- When done, open the basket and wait for 10 seconds before removing the salmon. The cold air will make the meat shrink a bit and therefore helps it “unstick” from the basket. Carefully and gently transfer the cubes to a serving plate so they won’t fall apart.
- Garnish the salmon bites with spring onions and sesame seeds and a few drizzles of bang bang sauce. Serve the extra sauce on the side. Serve warm.

Note: You can leave the skin on or remove it with a sharp knife. I leave the skin on because I love the crispy texture it brings to the salmon bites. Plus, the skin is where the majority of the omega 3s are.
- Combine all of the ingredients for the marinade (coconut aminos, rice vinegar, garlic, sesame oil, and lime juice) in a small bowl.
- Transfer the chopped salmon to a large zip lock bag or sealable container along with the marinade. Seal the bag and swish everything around until all of the chunks of salmon are coated in marinade. Marinate the salmon for at least 15 minutes in the refrigerator, or up to 24 hours if you have more time.
- Preheat the air fryer to 400 degrees F for 4 minutes. Spray air fryer basket with cooking spray.
- Transfer the marinated salmon cubes to the air fryer basket in a single layer (you may need to do this in two batches depending on the size of your air fryer).
- Air fry at 400 for 8 to 12 minutes, or until the outside of the salmon is crispy and the bites are cooked through. These salmon bites are air-fried to perfection. Crispy on the outside and tender in the center, they’re perfect for dipping in a sweet and savory sauce!

Ingredients
- 4 portions Sizzlefish salmon
- 1/4 cup hoisin sauce
- 1 tbsp chili garlic sauce
- 2 tbsp coconut aminos
- 1 tbsp lime juice
- 2 tsp sesame seeds
- Jalapeño slices
- Lime wedges
Directions
- Blot excess moisture from salmon using paper towel.
- Slice salmon into bite sized pieces. Add to a medium bowl.
- Stir together hoisin sauce, chili paste, coconut aminos and lime juice in a small bowl. Pour half of the sauce over salmon bites and stir gently to coat. Transfer the remaining sauce to a small cup for serving.
- Grease basket of air fryer with cooking spray and place salmon bites in basket leaving space between for air to circulate.
- Air fry for 380ºF for 10 minutes.
- Serve salmon bites hot garnished with sesame seeds and jalapeño. Serve with lime wedges and remaining sauce for dipping.
Blackened Baked Salmon Bites

Ingredients
- 1 lb salmon (skin removed, cut into cubes)
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon cayenne
- 1 teaspoon brown sugar
- 1 teaspoon olive oil
Instructions
- Preheat the oven to 450℉. Add oil to the bottom of a sheet pan (alternatively, use parchment paper). Set aside.
- Remove skin from salmon. Cut off the belly piece. If longer than three inches, cut down the middle to make more of a square shape. For the rest of the salmon, cut into equal sized, 1-2 inch cubes. Place the salmon in a bowl.
- Mix together the paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne, kosher salt, and brown sugar together.
- Toss the spice mix into the bowl with the cubed salmon. Mix thoroughly until all pieces of salmon are coated in the seasonings.
- Pour the salmon onto the sheet pan. If there are some pieces larger than others, group them to one side of the sheet pan. Group the belly pieces on the other size. Drizzle with the olive oil, then place in the oven with the larger pieces towards the back of the oven, belly pieces towards the oven door. Bake for 8-10 minutes, or until the salmon is cooked through to your liking. Serve, and enjoy!

- 1 pound salmon (cut into 1 inch cubes)
- 1 tablespoon soy sauce (low sodium)
- ½ teaspoon black pepper (minced)
- 1 teaspoon garlic powder
- 2 teaspoons olive oil
Sauce
- 2 tablespoons butter (unsalted)
- 4 cloves garlic (minced)
- ¼ cup white wine (dry)
- 1 cup heavy cream
- ½ cup Parmesan cheese (freshly grated)
- 1 tablespoon fresh lemon juice
- 2 teaspoons cornstarch
- 2 tablespoons fresh parsley (chopped)
Instructions
- Prep the salmon. Pat dry the salmon bites with paper towels, this will ensure the salmon will get nice and crispy. Toss the salmon pieces with the soy sauce, black pepper, garlic powder and olive oil. Spray the basket of the air fryer with cooking spray.
- Air fry the salmon. Place the salmon bites into the air fryer basket and cook for 8 minutes at 390°F flipping over half way through, or simply just shaking the basket a couple times.
- Make the creamy garlic sauce. While salmon is cooking, prepare the creamy garlic sauce by melting the butter in a small saucepan over medium heat. Add the garlic and sauté for 30 seconds until fragrant. Add the white wine (or chicken broth) and cook for another minute until most of the wine has reduced.
- Finish the sauce. Reduce the heat to low-medium, add the cream to the saucepan and bring to a simmer, while stirring occasionally. Stir in the Parmesan cheese and simmer until the cheese melts and the sauce thickens. Add the lemon juice and parsley and stir. Taste for seasoning and season with salt and pepper as needed. I mixed my lemon juice with a couple teaspoons of cornstarch to thicken the sauce a bit, but this step is totally optional.
- Plate and serve. Serve the salmon bites with the creamy garlic sauce drizzled over along some rice and steamed veggies.

- 2 teaspoons light brown sugar lightly packed
- 1 1/2 teaspoon garlic powder
- 1 teaspoon salt

For the Air Fryer Salmon Bites:
- Preheat the air fryer to 400F.
- Cut the salmon into approximately 1 1/2-inches pieces.
- Add the salmon, brown sugar, garlic powder, salt, black pepper, onion powder, smoked paprika, cayenne pepper, and oil to a large bowl and toss to coat.
- Add the salmon pieces to the air fryer (skin-side-down if your salmon had skin) so that none of the pieces are touching. (Depending on the size of your air fryer, you may need to air fry the salmon in 2 batches to avoid over-crowding the air fryer basket.)
- Air fry until the salmon is fully cooked, about 5 to 7 minutes, depending on the thickness of your salmon and the size of the pieces.
For the Creamy Cajun Sauce:
- While the salmon is air frying, make the sauce. To do so, add all ingredients to a medium bowl and stir to combine.
To Serve:
- Transfer the cooked salmon bites to a serving platter, and spoon the sauce into a small bowl to serve along with the salmon for dipping. Serve warm along with fresh lemon wedges to squeeze on top, and fresh minced parsley sprinkled on top.

- 1½ lbs salmon fillet skin off
- ¼ cup white miso paste
- ¼ cup granulated sugar
- ¼ cup mirin or rice wine vinegar
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp sesame oil
- 2 tsp ginger paste
- 1 tsp granulated garlic
- Cooked rice or other grain for serving
- Optional garnishes: sesame seeds, cilantro, scallions, cucumber slices, thinly sliced chiles, pickled ginger, avocado
Instructions
- Cure the salmon. It takes just 15 minutes to quick cure.
- Prepare the salmon. Preheat a broiler on high with a rack set just below it. Transfer the cubed salmon to a large mixing bowl.
- Make the marinade. Whisk ¼ cup white miso paste, ¼ cup sugar, ¼ cup mirin, 2 Tbsp soy sauce, 1 Tbsp sesame oil, 2 tsp ginger paste, and 1 tsp granulated garlic in a small bowl or measuring cup. Reserve 2 Tbsp of marinade, then pour the rest on top of the salmon. Gently toss to evenly coat. Allow this to sit for 20-30 minutes (though you can cook it right away if you don’t have time).
- Cook the salmon. Transfer the marinated salmon to a parchment or silicone lined rimmed baking sheet. You can pour the salmon and marinade right on top of the sheet pan, just note that the excess marinade might burn a bit, not the salmon. If you prefer, you can use tongs to transfer the salmon without excess marinade to the sheet pan. Broil on high for 5-7 minutes, rotating the pan once halfway through to ensure even cooking.
- Garnish, then serve. Serve salmon bites over sushi rice with reserved salmon marinade brushed on top, if desired. Garnish with avocado, scallions, cilantro, sliced cucumbers, pickled ginger, sesame seeds, and chiles, then serve immediately!
