  • 1 nectarine
  • 1 oz. thyme infused simple syrup
  • 2 oz. gin (or vodka)
  • 1/2 oz. St. Germain liqueur
  • 1/2 lime, juiced
  • 1 oz. club soda

INSTRUCTIONS

  1. Puree nectarine and simple syrup in blender. Strain through a fine mesh strainer, pressing with a spatula to get all the juice out of the pulp. You should have about 2 ounces. Reserve puree juice and throw out the remaining pulp. You can skip the straining if you don’t mind the pulp in your cocktail.
  2. Add puree to cocktail shaker with ice. Add gin or vodka, St. Germain, lime juice, and club soda. Shake well and strain into martini glass. Garnish with sprig of thyme.

NOTES

To make the simple syrup:

Combine one cup sugar and one cup water in small saucepan with a bunch of thyme sprigs. Bring to a boil to dissolve sugar, turn off heat and let cool. Remove thyme sprigs and store syrup in refrigerator.

Optional:

Try serving this cocktail in a tall glass with ice and top with club soda. Just omit the club soda when shaking the ingredients and top off the drink with it.

Strawberry Nectarine Lemonade

Apricot-Nectarine Puree

  • 1 pound fresh apricots, halved and pitted
  • 1 pound fresh nectarines, halved and pitted

Cocktail

  • 15 fresh mint leaves (about 1/4 loosely packed cup)
  • 25 cup (2 ounces) bourbon
  • Finely crushed or pebbled ice
  • 1 mint sprig, for garnish

Directions

Make the apricot-nectarine puree:
  1. Preheat oven to 400°F. Toss together apricots, nectarines, and sugar on a large rimmed baking sheet until fully coated; spread in an even layer.
  2. Roast in preheated oven until fruit is soft and juicy, about 20 minutes, stirring halfway through roasting time. Let cool 5 minutes.
  3. Scrape fruit and any liquid on baking sheet into a food processor or blender; pulse until smooth, 5 to 8 pulses.
  4. Pour through a fine wire-mesh strainer into a medium bowl. Refrigerate, uncovered, until completely cool, about 20 minutes. (You should have about 2 cups apricot-nectarine puree, enough for 8 cocktails.)
Make the cocktail:
  1. Muddle mint leaves and 1/4 cup apricot-nectarine puree in bottom of a julep cup.
  2. Add bourbon and crushed or pebbled ice to cover; stir until chilled, about 20 seconds. Fill cup with additional ice, adding enough to form a small mound on top.
  3. Pour 2 to 4 tablespoons apricot-nectarine puree over ice. Garnish with a mint sprig, and serve with a short julep straw.

To Prepare 8 Cocktails

Muddle 2 cups loosely packed fresh mint leaves and 2 cups apricot-nectarine puree in a pitcher. Add 2 cups bourbon and crushed or pebbled ice to cover, and stir until chilled, about 20 seconds. Serve drinks over ice, and garnish with mint sprigs.

Make Ahead

Apricot-nectarine puree may be stored in an airtight container in refrigerator up to 1 week.

This delicious Nectarine Whiskey Sour is made with only 6 ingredients.   • 2-3 nectarines, peeled and chopped
  • 1 cup sugar
  • 1 cup water
  • 1 large sprig of fresh Rosemary

For the cocktail

  • 1.2 ounces Nectarine Rosemary Simple Syrup
  • 2 ounces Gin
  • 1 fresh egg white

Instructions

  1. To make the syrup, stir together the sugar and 1 cup water in a medium saucepan set over medium-high heat. Bring to a boil, stirring occasionally until the sugar is dissolved.
  2. Add nectarines and boil for about 3 minutes. Remove from heat.
  3. Add in rosemary sprig. Let mixture steep for 30 minutes.

  • ⅓ cup (35 g) finely chopped fresh ginger
  • 2 medium-sized white nectarines or peaches, chopped
  • 2 medium-sized white nectarines or peaches, sliced
  • ¼ cup strained lemon juice
  • 1 (750 ml.) bottle prosecco or other dry white sparkling wine such as cava, chilled
  • 1 cup elderflower liqueur, chilled
  • 1-2 cups sparkling water, chilled

Preparation

  1. In a large measuring pitcher, muddle the honey and chopped ginger until the juices run out of the ginger, approximately 1 minute.
  2. Muddle in the chopped nectarines and lemon juice until well crushed, or pulse the mixture in a food processor or with an immersion blender to speed up this process.
  3. Stir in half of the Prosecco. Strain the mixture through a fine mesh sieve and into a large punch bowl or pitcher, pressing on the fruit pulp to extract all the good stuff. Discard the pulp.
  4. Add the rest of the Prosecco and the sliced nectarines to the sangría.
  5. Taste, adding more lemon juice if you feel the drink it needs it. Add ice and sparkling water to the pitcher, and serve within the hour while the drink is bubbly, ladling it into cups with bits of the fruit.

Sparkling Nectarine & Honey Cocktail

This simple sparkling drink is a very light and refreshing end of summer cocktail. It can easily be diluted with club soda or seltzer, to taste.

  • 1 oz honey syrup (half honey, half warm water)(I used Italian Melata di Bosca honey)

Smoked Nectarine Bellinis

INGREDIENTS

  • 2 fragrant ripe nectarines or peaches, peeled, cut in half, and pitted
  • 1/2 cup sugar, in a shallow bowl
  • 1 bottle cold Prosecco
  • Cinnamon sticks (optional), for garnish

RECIPE STEPS

Step 1: Set up your smoker according to the manufacturer’s directions and heat to 275 degrees. (Alternatively, you can grill the fruit on charcoal or gas grill.) Brush or scrape the grate clean and oil it well. Add wood chips or chunks (preferably fruitwood) to the fire, following the manufacturer’s instructions.

Step 2: Dip each nectarine half on all sides in the sugar. Smoke, turning with tongs, until caramelized (dark brown) on all sides, about 20 minutes. (2 to 4 minutes if direct grilling.)

Step 3: Transfer the nectarine halves to a plate to cool. Puree 3 halves in a food processor or blender. Cut the remaining half into thin wedges for garnishing the Bellini. Impale on cinnamon sticks, if desired.

Step 4: Add 2 tablespoons of puree to each of 4 champagne flutes. Fill each flute with chilled Prosecco and gently stir with the cinnamon stick or a bamboo skewer. Serve immediately.

Nectarine Whiskey Smash

This cocktail recipe is a delicious clash of craft spirits! Combining smooth bourbon whiskey with tangy nectarine liqueur and a burnt sugar simple syrup makes for truly the perfect fireside summertime cocktail.

Nectarine Whiskey Smash

A classic whiskey cocktail that first appeared in Jerry Thomas’s cocktail recipe book in 1862. He called it a variation of the Julep. By 1888, it was considered a separate cocktail made of whiskey, simple syrup, mint, and “small pieces of seasonal fruit”. We selected the last nectarines of summer, but a few customers told us that they make it with blackberries, too.

Ingredients

  • 2 oz. LPS Bourbon
  • 4 slices of nectarine
  • 1/4 oz. fresh squeezed lemon juice
  • 1/4 oz. burnt sugar simple syrup (recipe below)
  • 4 mint leaves
  • 1 oz. Club Soda

Instructions

  1. Put the nectarine slices, lemon juice, burnt sugar simple syrup, and mint leaves into a ball jar. Smash.
  2. Add the bourbon and the club soda and stir.
  3. Add ice. Garnish with a fresh nectarine slice and a mint leaf.

Burnt Sugar Simple Syrup

  1. Melt 1 cup of sugar over high heat in a saucepan, stirring constantly.
  2. When the sugar is a caramel-colored syrup, add 1 cup boiling water.
  3. Turn off the heat and let the sugar dissolve. Cool to use. Refrigerate.

Sparkling Summeripe Nectarini

Summeripe Nectarines, lime, thyme, and gin come together to create a delicious and refreshing summer time drink. Make the Sparkling Summeripe Nectarini kid friendly by substituting sparkling water for the gin.

Ingredients

For the Sparkling Summeripe Nectarini
  • 4 oz Nectarine nectar, about 2 to 3 nectarines juiced 
  • 4 oz Gin
  • 4 oz Thyme infused simple syrup (recipe in notes below)
  • 2 oz fresh lime juice
  • 2 Thyme sprigs for garnish
  • Splash of sparkling water
  • Splash of St. Germain
  • Handful of ice for shaker

Instructions

  1. Juice the nectarines with a masticating cold press juicer. Or peel and transfer nectarine slices to a blender and blend until smooth and juicy. Then pour through a fine-mesh strainer or nut milk bag to remove excess pulp.
  2. Combine nectarine juice, thyme infused simple syrup, Gin, lime juice, and ice into a shaker and shake vigorously
  3. Strain and pour liquid into a martini glass
  4. Add a splash of sparkling water and St. Germain
  5. Garnish with a Summeripe Nectarine Slice & a fresh Thyme Sprig and enjoy responsibly!

Notes

For Thyme Infused Simple Syrup
  • 2 cups sugar
  • 2 cups water
  • Handful of Fresh Thyme Sprigs
Instructions
  1. In a small sauce pan, dissolve sugar into water over low heat, stirring occasionally
  2. Once sugar is completely dissolved, remove from heat and add handful of fresh thyme sprigs
  3. Place liquid into a jar with a lid and cool in the refrigerator for at least 2-3 hours, cooling overnight is best
  4. Strain and toss the thyme
  5. The thyme infused simple syrup can be stored in a jar with a lid for 1-2 months in the refrigerator

Nectarine Chili Mojito

  • Prep time:  10 mins
  • Serves: 4

Ingredients

  • 1 cup fresh mint leaves, loosely packed
  • 1 fresno chili, thinly sliced
  • 1 cup fresh nectarine chunks
  • 3 tablespoons brown sugar
  • ½ cup fresh lime juice
  • ½ cup rum
  • cold club soda

Instructions

  1. fresh mint leaves, nectarine slices and fresh fresno chili slices for garnish
  2. Split the mint leaves and red chili between 4 tall glasses. Use a muddler and smash the mint leaves and chili up a bit.
  3. In the jar of a blender, combine the nectarine chunks, brown sugar and puree until smooth.
  4. Divide the puree between the 4 glasses and then fill the glasses with ice. Pour the lime juice and rum over the ice and then top the glasses off with cold club soda. Gently stir the drinks, garnish as desired and serve immediately.

White Nectarine Frosé

  • Servings: 3

Ingredients

  • 1 cup dry rosé, (eight cubes from standard ice cube tray), frozen
  • 1 cup sweet aperitif wine, such as Gina Mochetto (eight cubes)
  • 1/2 cup diced fresh nectarine, frozen
  • 1/4-1/2 cup chilled rosé
  • several fresh, room-temp nectarine slices for garnish

Instructions

  1. First, you’ve got to plan ahead a bit and freeze up enough rosé and aperitif wine cubes to keep you covered. A full ice cube tray of rosé (2 cups of wine), a full ice cube tray of aperitif wine, and one nectarine will make you a little over two rounds for two people. It’s best to freeze everything overnight, but in a pinch, you’ll need at least a few hours. Cut your nectarine into bite-sized chunks, dump them in a zipper baggy and stick them in the freezer along with the wine cubes.
  2. When you are ready to get frosé-ing, place 8 cubes each of your rosé and your Lillet rose into a blender, along with a half cup of frozen nectarine pieces. Blend.
  3. Add anywhere from 1/4-1/2 cup of chilled rosé to help this whole thing liquify. You want it to be pretty thick and frozen though, because once it’s in the cup and you’re enjoying it by the pool, it melts quickly.
  4. Fill your glasses, and garnish with skewered nectarine slices.

Strawberry Nectarine Mojito

Strawberry Nectarine Mojito – a delicious, fresh and fruity cocktail, made with simple syrup, rum, strawberries, nectarines and mint.

Ingredients

  • 1/2 cup simple syrup
  • 2 limes + more for garnishing
  • 1 large white flesh nectarine
  • 6 large strawberries + more for garnishing
  • 16 mint leaves + more for garnishing
  • 4 oz white rum
  • soda water
  • ice

Instructions 

  1. Slice nectarine and strawberries. Place in a bowl. Add juice from 2 limes, simple syrup and mint leaves. Muddle for 1-2 minutes, until juices are released from the fruit. Strain mixture and discard the flesh.
  2. Fill 2 tall glasses with ice. Divide mixture between two glasses. Add 2 oz of rum to each glass. Add sliced strawberries and some mint leaves for garnishing. Top with soda water.

  • 5 fl oz East Imperial Tonic Water

  1. Pack a chilled tall glass with ice and slide a cinnamon stick down the side.
  2. Add the nectarine port and tonic water and stir gently to combine

Ingredients

  • 1 nectarine, sliced
  • 6 sprigs of thyme
  • kombucha
  • champagne

Method

  • 1. Place a slice of nectarine in each glass.
  • 2. Add a thyme sprig.
  • 3. Quarter-fill with your favourite kombucha (we used a plum one but berry, green apple or ginger would all work well).
  • 4. Top up with Champagne.

Summer Rosé Sangria

Summers freshest stone fruit marinated in a chilled and refreshing rosé wine makes for the best Summer Rosé Sangria! Your new favorite summer nights cocktail can be enjoyed in no time by combining ruby red cherries, sliced nectarines, apricots and lemons, mixed with St. Germain Elderberry Liqueur and a bottle of Rosé.

Ingredients

  • 1 bottle Rosé Wine
  • ½ Cup St. Germain Elderberry Liqueur
  • 2 Tbsp Lemon Juice
  • 1 Nectarine, Pitted and Sliced
  • 1 Apricot, Pitted and Sliced
  • ½ Cup Red Cherries, Pitted
  • ½ Lemon, Sliced
  • Sparkling Water

Instructions

  1. In a large pitcher combine the fruit (cherries, nectarines, apricots and sliced lemons)
  2. Pour the St. Germain Liqueor and lemon juice over the fruit
  3. Pour the bottle of rosé into the pitcher and allow the fruit to infuse in the rosé wine for one hour
  4. When you are ready to serve the sangria, fill individual glasses with ice, pour the sangria into each glass, divide the fruit slices and top off each glass with a splash of sparkling water (optional: garnish with fresh mint)

Nectarine Rosè Spritz

Made in one pitcher and in under 10 minutes, this Rosé spritz is the perfect cocktail for entertaining. All you need are some fresh berries, fresh nectarines, a little tequila, St. Germain, and a good bottle of rosé. Within minutes you’ll have the prettiest and most delicious cocktail that everyone will LOVE!

Ingredients

  • 1/2 cup fresh blackberries
  • 1/2 cup fresh raspberries
  • 4 basil leaves (optional)
  • 1/4 cup lemon juice
  • 6 ounces silver tequila
  • 4 ounces St. Germain (elderflower liquor)
  • 1 750 ml bottle sparkling rosé, chilled
  • 2 peaches or nectarines, sliced and cut into star shapes*

Instructions

  1. In a pitcher, muddle the raspberries, blackberries, basil, and lemon juice together, squishing everything to release the juices. 
  2. Add the tequila, St Germain, and rosé, stirring gently to combine. Stir in the peaches. Chill until ready to serve. 
  3. Serve over ice and garnish with basil. 
  4. Alternately, you can divide the drink between 6 mason jars fitted with lids and keep them chilled in a bucket filled with ice.

Notes

*To cut stars out of peaches, slice the fruit into rounds until you get to the pit. Use a star shaped cookie cutter and cut as many stars as you can. 

Red Wine Sangria

This easy Red Wine Sangria hits all the right notes of summer – boozy, fruity, and delicious – and perfect for a warm summer day!

Ingredients

  • 1 bottle of medium-bodied red wine (suggested: Garnacha (also called Grenache), Beaujolais or other fruity red wine
  • 1/4 – 1/2 cup brandy or Cointreau
  • 1/2 cup orange juice (fresh squeezed is best)
  • 1 orange, sliced
  • 1 lemon, sliced
  • 1 nectarine, sliced
  • 1 plum, sliced
  • 1/2 cup berries, such as blackberries or strawberries
  • 1/4 cup simple syrup (or to taste)
  • Ice, for serving

Instructions

1. Add wine, brandy, and orange juice to pitcher. Stir.

2. Slice orange and lemon into rounds. Slice nectarines and plums. Add sliced fruits and berries to pitcher. Stir to combine.

3. Add simple syrup. You can also add granulated sugar, starting with 2 TBSP. and then adjusting as needed. Stir until sugar is dissolved.

4. Chill for at least 1 hour and up to 4 hours to let flavors meld.

5. Serve over ice in wine glasses.

Notes

  • Make sure to use a light to medium-bodied red wine. If it’s too strong or tannic, it won’t taste right.
  • I prefer fresh squeezed orange juice, but bottled not-from-concentrate orange juice can work, too.
  • For a lighter sangria, add a small amount of sparkling water or club soda to each glass before serving.
